What is great about this soup? It is simple, full of flavour and warming. After a long day at work it makes a welcoming dinner, especially in the cold evenings. I didn’t actually weigh any of the ingredients for this recipe so the measurements I give are estimated. But that’s why I love a chicken and vegetable soup, you don’t really need to follow a recipe to the dot to get it to taste great. In fact, use this recipe as a guide and chuck in any other vegetables you have hanging around. You cannot go wrong!
Creating your own stock is so easy and has so many advantages. Let me try to persuade you. Firstly, if you like efficiency and despise wasting food (like me) then a whole chicken is your best friend. There is plenty of meat on a whole chicken for meal prep and the bones are perfect stock material. You are extracting much needed minerals, such as calcium and magnesium, from one of the best sources available. This means homemade stock is cheap in the grand scheme of things because you don’t need to spend a ridiculous amount of money on synthetic mineral supplement form for joints, a healthy heart, functioning brain and so on. With homemade stock you are in control of what goes in it, and ultimately what goes in you, so skipping store-bought stock will skip all those additives which aren’t good for you. I particularly try to avoid industrial-made “foods”, and I seriously use quotations because some products should not be gifted such a precious word, because they lack flavour. Homemade stock has SO much more flavour, and this links to my previous sentence which is that there aren’t any additives. Some additives are a sad replacement of flavour. Homemade stock doesn’t need additives, it is so flavoursome on its own!
