  1. Heat the coconut oil in a pan on a medium-high heat and add the apples. Cook for 5 minutes until golden brown.
  2. Remove the apples from the pan and repeat with the onion.
  3. Season the chicken thighs with salt and pepper.
  4. Pour the chicken stock and apple cider vinegar into a cooking pot. Add the honey and cinnamon and stir.
  5. Add the chicken thighs, cooked apples, cooked onion and potatoes. Top with rosemary and cook in the oven at 180 degrees celsius for 50 – 60 minutes.
  6. Remove from the oven, allow to cool, serve and enjoy!
