Apple Chicken Potato Pan

Unfortunately, I have been ill with sickness for the past five weeks or so, which deterred me from the kitchen. Plus it is party season so I have been occupied with quite a bit of eating out with family and friends. I have organised some of the social gatherings and came to realise that when looking for a house to stay in on AirBnB, I chose houses based on how decent their kitchens are! You to have to, it is the most important room of a house, right? I finally found myself a few spare hours and got busy in my own kitchen, this is what I have mustered up.

Apples are super delicious and have a great nutrition profile; high in vitamin C, vitamin K, potassium, manganese and copper. They are also a great source of fiber which leaves you feeling fuller for longer and so can aid with weight loss. In addition, the fiber acts as a prebiotic which means it feeds the good bacteria in your gut and helps with protecting against heart disease.

This stew-like dish is perfect on its own, as a starter or main. I have an obsession with peas at the moment so I served it up with a serving of peas, although it pairs well with any greens and/or root veg. Either add extra veggies to the cooking pot before it goes into the oven or cook separately and add after. The cinnamon works well with the apples to give a warm spiced feeling; just what is needed as we creep deeper and deeper into the winter months. Note: the chicken thighs are so tender you will crave more!

  1. Heat the coconut oil in a pan on a medium-high heat and add the apples. Cook for 5 minutes until golden brown.
  2. Remove the apples from the pan and repeat with the onion.
  3. Season the chicken thighs with salt and pepper.
  4. Pour the chicken stock and apple cider vinegar into a cooking pot. Add the honey and cinnamon and stir.
  5. Add the chicken thighs, cooked apples, cooked onion and potatoes. Top with rosemary and cook in the oven at 180 degrees celsius for 50 - 60 minutes.
  6. Remove from the oven, allow to cool, serve and enjoy!
